Ingredients

  • 500g Rainbow mix frozen vegetables

  • 1 Tbsp Sesame oil

  • 300g Plant based mince

  • 4 cups Quick brown rice

  • 1/3 cup Teriyaki marinade

  • 1 Spring onion

Methods

Instructions

  • Defrost the frozen vegetables in the microwave for 2-3 minutes.

  • Heat the sesame oil in a pan over a medium heat.

  • Add the plant-based mince and cook until heated through.

  • Add the vegetables to the pan along with the teriyaki sauce and mix to combine. Continue cooking until the vegetables are tender.

  • Serve over the cooked rice and sprinkle over chopped spring onion.
