Ingredients

  • 50g Dried fettuccine pasta

  • 1 tsp Extra Virgin olive oil

  • 1/4 med Red onion

  • 2 Garlic Cloves

  • 1 sml Chicken breast

  • 1 cup Baby spinach

  • 4 Tbsp Sundried tomato pesto

  • 1/4 cup Parmesan

Methods

Instructions

  • Cook the pasta as per packet instructions. Drain and set aside.

  • Finely dice up the onion and crush the garlic. Cut the chicken up into strips.

  • Heat the olive oil in a pan over a medium heat and cook the onion and garlic for 2-3 minutes.

  • Add in the chicken and fry until cooked through.

  • Season well with salt and pepper.

  • Add the spinach to the pan and cook until wilted.

  • Lastly, add the pasta and pesto to the pan and toss to combine.

  • Sprinkle over parmesan and enjoy!
