Ingredients

  • 2 Eggs

  • 2 Slices of mixed grain bread

  • 1 tsp Curry powder

  • 1 Tbsp Light mayonnaise

  • 1 handful Alfalfa sprouts

Methods

  • Prepare a pot of boiling water.

  • Place eggs carefully in the water and cook for 8-10 minutes to make hard boiled egg.

  • Peel and mash the boiled eggs in a bowl with the curry powder, salt, pepper and mayonnaise.

  • Spread the egg onto the bread. Top with sprouts or other leafy greens of choice, then sandwich together.

  • Cut as dseired. Enjoy!
