Ingredients
180g Potatoes
1 tsp Butter
130g Premium beef mince
1/2 sml Onion
1/2 sml Carrot
1/2 cup Mushrooms
1/2 tsp Olive oil
1/2 tsp Mixed herbs
1 tsp Crushed garlic
1/4 cup Beef stock
1 Tbsp Tomato paste
2 Tortilla boats
25g Edam cheese
Methods
Peel, cut and boil the potatoes until soft.
Mash together with the butter and season with salt and pepper. Set aside.
Preheat oven to 180ºC, or skip this step if using an air fryer.
Finely dice the onion and mushrooms and grate the carrot.
In a pan, heat the olive oil and cook the onion and garlic until aromatic. Add the remainder of the vegetables and the mince. Cook until brown.
Add in the tomato paste, and beef stock and season with mixed herbs, salt and pepper.
Simmer for around 10 minutes until thickened and the flavours develop.
Place the mince mixture into the boats. Top with mashed potato and grated cheese.
Bake for 10-15 minutes in the oven or air fryer until the base is crisp and the cheese is melted.
