Ingredients

  • 180g Potatoes

  • 1 tsp Butter

  • 130g Premium beef mince

  • 1/2 sml Onion

  • 1/2 sml Carrot

  • 1/2 cup Mushrooms

  • 1/2 tsp Olive oil

  • 1/2 tsp Mixed herbs

  • 1 tsp Crushed garlic

  • 1/4 cup Beef stock

  • 1 Tbsp Tomato paste

  • 2 Tortilla boats

  • 25g Edam cheese


Methods

  • Peel, cut and boil the potatoes until soft.

  • Mash together with the butter and season with salt and pepper. Set aside.

  • Preheat oven to 180ºC, or skip this step if using an air fryer.

  • Finely dice the onion and mushrooms and grate the carrot.

  • In a pan, heat the olive oil and cook the onion and garlic until aromatic. Add the remainder of the vegetables and the mince. Cook until brown.

  • Add in the tomato paste, and beef stock and season with mixed herbs, salt and pepper.

  • Simmer for around 10 minutes until thickened and the flavours develop.

  • Place the mince mixture into the boats. Top with mashed potato and grated cheese.

  • Bake for 10-15 minutes in the oven or air fryer until the base is crisp and the cheese is melted.
