Ingredients
1 cup Basmati rice
1 Brown onion
1 Garlic clove
1 Tbsp Fresh ginger
2 tsp Rice bran oil
4 Eggs
500g Premium beef mince
2 Tbsp Gochujang
2 Tbsp Reduced salt soy sauce
3/4 Tbsp Brown sugar
200 Mixed frozen vegetables
1 Spring onion
1 Tbsp Sesame oil
Methods
Prepare rice as per packet instructions.
Finely dice the onion, garlic and ginger.
Bring a frying pan to medium heat. Pour in half the rice bran oil.
Whisk together the eggs, and add to the frying pan. Tilt the pan to allow the egg to form a pancake shape. Allow the egg to cook before removing it from the pan and slicing it into strips.
Pour in the remaining oil. Saute the onion, garlic and ginger for a few minutes before adding the beef mince to the pan, breaking it into smaller pieces.
In a small bowl combine the Gochujang, soy sauce, sesame oil and brown sugar and pour it into the pan. Mix well.
Add in the frozen vegetables, allow to defrost and cook slightly before adding in the rice.
Fold the rice and egg into the rest of the mix. Spread the fried rice over the bottom of the pan, and leave for 1-2 minutes before stirring up, this way it allows the egg to caramelise.
Serve and garnish with sliced spring onion.
