Ingredients

  • 1 cup Basmati rice

  • 1 Brown onion

  • 1 Garlic clove

  • 1 Tbsp Fresh ginger

  • 2 tsp Rice bran oil

  • 4 Eggs

  • 500g Premium beef mince

  • 2 Tbsp Gochujang

  • 2 Tbsp Reduced salt soy sauce

  • 3/4 Tbsp Brown sugar

  • 200 Mixed frozen vegetables

  • 1 Spring onion

  • 1 Tbsp Sesame oil

Methods

  • Prepare rice as per packet instructions.

  • Finely dice the onion, garlic and ginger.

  • Bring a frying pan to medium heat. Pour in half the rice bran oil.

  • Whisk together the eggs, and add to the frying pan. Tilt the pan to allow the egg to form a pancake shape. Allow the egg to cook before removing it from the pan and slicing it into strips.

  • Pour in the remaining oil. Saute the onion, garlic and ginger for a few minutes before adding the beef mince to the pan, breaking it into smaller pieces.

  • In a small bowl combine the Gochujang, soy sauce, sesame oil and brown sugar and pour it into the pan. Mix well.

  • Add in the frozen vegetables, allow to defrost and cook slightly before adding in the rice.

  • Fold the rice and egg into the rest of the mix. Spread the fried rice over the bottom of the pan, and leave for 1-2 minutes before stirring up, this way it allows the egg to caramelise.

  • Serve and garnish with sliced spring onion.
