1/2 lrg Cucumber
50g Smoked salmon
50g 90-second brown rice and quinoa
3/4 tsp Mayo
3/4 tsp Sriracha
1 tsp Sesame seeds
Methods
Cut the cucumber in half, then scoop out the filling to create a cucumber boat.
Slice the salmon and scooped out cucumber finely.
Mix the sliced salmon, cucumber, sriracha and mayo in a bowl.
If all the filling doesn't fit inside the boats, have it separately on the side. Enjoy!
Heat the rice and place inside the cucumbers, followed by the salmon mixture. Top with sesame seeds.
