Ingredients

  • 1/2 lrg Cucumber

  • 50g Smoked salmon

  • 50g 90-second brown rice and quinoa

  • 3/4 tsp Mayo

  • 3/4 tsp Sriracha

  • 1 tsp Sesame seeds

Methods

  • Cut the cucumber in half, then scoop out the filling to create a cucumber boat.

  • Slice the salmon and scooped out cucumber finely.

  • Mix the sliced salmon, cucumber, sriracha and mayo in a bowl.

  • If all the filling doesn't fit inside the boats, have it separately on the side. Enjoy!

  • Heat the rice and place inside the cucumbers, followed by the salmon mixture. Top with sesame seeds.
