Ingredients
1 cup Basmati rice
1 Brown onion
1 2/3 cup Black beans
1 1/4 cup Canned corn kernals
4 cups Iceberg lettuce
1 Tbsp Extra virgin olive oil
1 tsp Ground cumin
1 tsp Ground coriander
1 tsp Smoked paprika
2 med Avocado
2 Tbsp Lime juice
Methods
Cook rice according to packet instructions.
Dice brown onion. Drain black beans and corn. Finely slice or shred the lettuce.
Heat olive oil in a pot over medium-high heat. Add the onion and sauté until softened. Add the spices, black beans and corn and sauté until heated through.
To make a quick guacamole, mash the avocado with a fork. Squeeze in half of the lime juice and season with salt and pepper, mix to combine.
When the rice is cooked, squeeze the remaining half of the lime into it and mix through.
To serve, place the rice in a bowl, along with the bean mix and shredded lettuce. Top with guacamole. Easy!
