Ingredients

  • 1 cup Basmati rice

  • 1 Brown onion

  • 1 2/3 cup Black beans

  • 1 1/4 cup Canned corn kernals

  • 4 cups Iceberg lettuce

  • 1 Tbsp Extra virgin olive oil

  • 1 tsp Ground cumin

  • 1 tsp Ground coriander

  • 1 tsp Smoked paprika

  • 2 med Avocado

  • 2 Tbsp Lime juice

Methods

  • Cook rice according to packet instructions.

  • Dice brown onion. Drain black beans and corn. Finely slice or shred the lettuce.

  • Heat olive oil in a pot over medium-high heat. Add the onion and sauté until softened. Add the spices, black beans and corn and sauté until heated through.

  • To make a quick guacamole, mash the avocado with a fork. Squeeze in half of the lime juice and season with salt and pepper, mix to combine.

  • When the rice is cooked, squeeze the remaining half of the lime into it and mix through.

  • To serve, place the rice in a bowl, along with the bean mix and shredded lettuce. Top with guacamole. Easy!
