Ingredients

  • 3/4 cup Canned corn kernels

  • 120g Tuna in spring water

  • 2 Spring onion

  • 1/2 sml Courgette

  • 1 Egg

  • 3/4 tsp Paprika

  • 1/3 cup Plain flour

  • 40ml Milk

  • 2 tsp Extra virgin olive oil

  • 1 1/2 Tbsp High protein greek yoghurt (natural)

  • 1/2 Tbsp Tomato relish

  • Drain corn and tuna. Finely chop spring onion. Grate courgette.

  • In a mixing bowl, lightly beat the egg. Add the corn, tuna, spring onion, courgette, paprika, flour and milk and season with salt and pepper. Mix until combined.

  • Heat the olive oil in a frying pan and add about ¼ cup of the batter into the pan. Fry until golden on both sides then remove from the pan and repeat with any remaining mixture.

  • Serve with yoghurt and tomato relish.
