Ingredients

  • 100g Avocado

  • 50g Courgette

  • 50g Cherry tomatoes

  • 50g Soba noodles

  • 100g Chicken breast

  • 1 Tbsp Olive oil

  • 1 tsp Lemon juice

  • 1 handful Fresh coriander

Methods

  • Prepare the avocado and coriander dressing. Add all ingredients for the dressing to a blender (avocado, lemon, coriander, half the olive oil, a dash of water, salt and pepper to taste). Blend till combined, add more or less water to get the right consistency.

  • Prepare the zoodles and slice the cherry tomatoes. If you have a spiraliser use this to make your courgette into noodles. If you don't have a spiraliser use a grater or peeler to make ribbons. Set aside the cherry tomatoes and courgette once made.

  • Dice the chicken and transfer it to a mixing bowl with paprika and garlic. Combine the chicken with the seasoning.

  • Bring a pot of water to a boil. Cook the soba noodles according to the instructions on the packet.

  • Add the chicken to a pan on medium heat and cook for roughly 8-10 minutes while the noodles are cooking. Set aside once cooked.

  • Cook the zoodles in a pan for roughly 2-3 minutes.

  • Top with fresh coriander and season with salt and pepper to taste!

  • Drain the soba noodles and combine all ingredients at the end.
