Ingredients
100g Avocado
50g Courgette
50g Cherry tomatoes
50g Soba noodles
100g Chicken breast
1 Tbsp Olive oil
1 tsp Lemon juice
1 handful Fresh coriander
Methods
Prepare the avocado and coriander dressing. Add all ingredients for the dressing to a blender (avocado, lemon, coriander, half the olive oil, a dash of water, salt and pepper to taste). Blend till combined, add more or less water to get the right consistency.
Prepare the zoodles and slice the cherry tomatoes. If you have a spiraliser use this to make your courgette into noodles. If you don't have a spiraliser use a grater or peeler to make ribbons. Set aside the cherry tomatoes and courgette once made.
Dice the chicken and transfer it to a mixing bowl with paprika and garlic. Combine the chicken with the seasoning.
Bring a pot of water to a boil. Cook the soba noodles according to the instructions on the packet.
Add the chicken to a pan on medium heat and cook for roughly 8-10 minutes while the noodles are cooking. Set aside once cooked.
Cook the zoodles in a pan for roughly 2-3 minutes.
Top with fresh coriander and season with salt and pepper to taste!
Drain the soba noodles and combine all ingredients at the end.
