Ingredients

  • 100g Hot smoked salmon

  • 1 sml Courgette

  • 1/4 Avocado

  • 1/4 Cucumber

  • 1 tsp Hulled tahini

  • 2 Tbsp Lemon juice

  • 2 Tbsp Water

  • 1/2 Tbsp Sesame seeds

  • 1/4 cup Edamame beans

  • 1/2 sml Carrot

  • 1/4 cup Brown rice & quinoa

Instructions

  • Prepare brown rice and quinoa as per packet instructions.

  • Put the edamame in a bowl of boiling water and leave to sit. Spiralise the courgette. If you don't have a spiraliser, use a grater to make thin courgette sheets.

  • Cut thin slices of the cucumber, Slice dice the avocado, julienne or grate the carrot.

  • Make the tahini dressing by combining the tahini, lemon juice and water in either a bowl or jar.

  • Heat the salmon in the microwave until hot, then serve with the rice and zoodles as your base for the bowl. Top the bowl with the avocado, cucumber, carrot and edamame.

  • Drizzle the tahini dressing over the health bowl and garnish it with sesame seeds. Enjoy!
