Ingredients
1/3 cup Frozen edamame beans
1/2 med Carrot
65g Soba noodles
2 Tbsp Apple cider vinegar
1 tsp Sesame oil
1/4 Tbsp Fresh ginger
80g Rump steak
1 handful Fresh coriander
1/2 Tbsp Sesame seeds
Methods
Place the frozen edamame in a bowl of boiling water and set it aside while it defrosts.
Peel and spiralize the carrot with a spiralizer. If you don't have a spiraliser, use a peeler to slice the carrot into thin ribbons.
Cook the soba noodles according to packet instructions.
While the soba noodles are cooking, prepare the dressing. In a jar add the apple cider vinegar, sesame oil and fresh ginger. Shake well to combine.
Bring a non-stick pan to high heat and cook the steak to your liking. Remove from the heat, and leave to rest on a plate for a few minutes before slicing.
Wipe out the steak pan and add the edamame and carrot. Cook for 2-4 minutes.
Combine all ingredients starting with the soba noodles, spiralised carrot and edamame. Top with sliced steak, dressing, fresh coriander and sesame seeds.
