Ingredients
100ml Milk
6 Eggs
2 Garlic cloves
10g Fresh dill
1/2 Red onion
100g Asparagus
50g Parmesan
200g Hot smoked salmon
160g Broccoli
1 Lemon
Methods
Finely dice the onion and garlic. Slice the asparagus and chop the broccoli into florets.
Saute the onion in a pan, followed by the garlic. Once fragrant, add the broccoli, and sliced asparagus. Cook till the colours start to brighten.
In a bowl, combine the eggs, and milk and grate in the parmesan. Season with salt and pepper.
Lay the vegetables across the bottom of a baking dish. Top with salmon before pouring over the egg mixture. Bake for 15-20 minutes or until the middle has set.
Garnish with fresh dill and lemon juice. Delish!
