Ingredients

  • 100ml Milk

  • 6 Eggs

  • 2 Garlic cloves

  • 10g Fresh dill

  • 1/2 Red onion

  • 100g Asparagus

  • 50g Parmesan

  • 200g Hot smoked salmon

  • 160g Broccoli

  • 1 Lemon

Methods

  • Finely dice the onion and garlic. Slice the asparagus and chop the broccoli into florets.

  • Saute the onion in a pan, followed by the garlic. Once fragrant, add the broccoli, and sliced asparagus. Cook till the colours start to brighten.

  • In a bowl, combine the eggs, and milk and grate in the parmesan. Season with salt and pepper.

  • Lay the vegetables across the bottom of a baking dish. Top with salmon before pouring over the egg mixture. Bake for 15-20 minutes or until the middle has set.

  • Garnish with fresh dill and lemon juice. Delish!
