Ingredients

  • 2 Eggs

  • 120g Cottage cheese

  • 60g Egg white

  • 2 Tbsp Psyllium husk

  • 70g Frozen mixed berries

  • 1/2 Tbsp Butter

  • 2 tsp Stevia

Methods

  • Blend egg, egg white, psyllium husk, cottage cheese, and stevia together until smooth.

  • Heat the pan on medium heat and add part of the butter to line the pan.

  • Pour enough mixture to make a pancake and cook until bubbling. Flip and cook until brown.

  • Repeat steps 2 and 3 until all the butter and mixture are gone.

  • Cook the frozen berries in a pot on medium to high heat, until reduced.

  • Top the pancakes with the berry mix. Enjoy!
