Ingredients
2 Eggs
120g Cottage cheese
60g Egg white
2 Tbsp Psyllium husk
70g Frozen mixed berries
1/2 Tbsp Butter
2 tsp Stevia
Methods
Blend egg, egg white, psyllium husk, cottage cheese, and stevia together until smooth.
Heat the pan on medium heat and add part of the butter to line the pan.
Pour enough mixture to make a pancake and cook until bubbling. Flip and cook until brown.
Repeat steps 2 and 3 until all the butter and mixture are gone.
Cook the frozen berries in a pot on medium to high heat, until reduced.
Top the pancakes with the berry mix. Enjoy!
