Ingredients

  • 1 Bagel

  • 90g Halloumi

  • 60g Mushrooms

  • 1 tsp Olive oil

  • 60g Avocado

  • 1 Squeeze of lemon juice

Methods

  • Dice the mushrooms and slice the halloumi.

  • Slice and mash up the avocado. Season with salt, pepper and lemon juice.

  • Bring a pan to medium heat, add the olive oil and grill the mushrooms and halloumi. Season with salt and pepper.

  • Cut the bagels in half and toast.

  • Place the smashed avocado on the bottom of the bagel and top with the mushroom and halloumi mix.

  • Add another squeeze of lemon juice if desired. Enjoy!
