Ingredients
1/4 Brown onion
1/4 cup Frozen peas
2 Tbsp Fresh chives
1/4 Red capsicum
2 Spring onion stalks
3 Rashers middle bacon
2 Eggs
3/4 med Potato
2 Tsp Crushed garlic
Methods
Cut potatoes into 2 cm cubed chunks. Bring a medium-sized pot of water to boil and add potatoes. Cook until soft.
Dice the onion and bacon, and slice the spring onion. When potatoes are nearly soft, heat a separate non-stick pan, add onion and garlic and cook for 2 minutes.
Add bacon to the pan and cook until slightly browned. Add spring onion, frozen peas and finely diced capsicum and cook until heated through.
Once potatoes are cooked, drain and add them to the bacon mixture. Crack eggs into the bacon mixture and stir constantly until cooked through and well combined.
Serve with fresh cut chives. Enjoy!
