Ingredients

  • 1/4 Brown onion

  • 1/4 cup Frozen peas

  • 2 Tbsp Fresh chives

  • 1/4 Red capsicum

  • 2 Spring onion stalks

  • 3 Rashers middle bacon

  • 2 Eggs

  • 3/4 med Potato

  • 2 Tsp Crushed garlic

Methods

  • Cut potatoes into 2 cm cubed chunks. Bring a medium-sized pot of water to boil and add potatoes. Cook until soft.

  • Dice the onion and bacon, and slice the spring onion. When potatoes are nearly soft, heat a separate non-stick pan, add onion and garlic and cook for 2 minutes.

  • Add bacon to the pan and cook until slightly browned. Add spring onion, frozen peas and finely diced capsicum and cook until heated through.

  • Once potatoes are cooked, drain and add them to the bacon mixture. Crack eggs into the bacon mixture and stir constantly until cooked through and well combined.

  • Serve with fresh cut chives. Enjoy!
