Ingredients

  • 1 Tbsp Pumpkin seeds

  • 1.5 Tbsp Almonds

  • 2 Tbsp Toasted coconut flakes

  • 1/2 Tbsp Chia seeds

  • 2 Tbsp Cocoa powder

  • 1 tsp Maple syrup

  • 2 tsp Coconut oil

  • 2 squares 73% Cocoa dark chocolate

  • 3/4 cup Frozen mixed berries

  • 1.5 Tbsp High protein greek yoghurt (vanilla)

  • 1/2 cup Milk

Methods

  • Preheat the oven to 180°C.

  • Chop the almonds into small pieces and chunks, or place the almonds in a food processor and pulse briefly until just coarsely chopped.

  • In a large bowl, stir together the chopped almonds, flaked coconut, chia seeds, pumpkin seeds, and cocoa powder. Add the syrup and melted coconut oil. Stir until all of the dry ingredients are completely coated in the wet ingredients.

  • Place the granola on a lined baking tray and bake until crisp. Keep a close eye on the granola so that it doesn't burn.

  • Let cool slightly, and stir in the chopped dark chocolate. Serve with berries, yoghurt and milk. Enjoy!
