Ingredients
3 med Carrots
1 cup Rolled oats
1 cup Walnuts
1 Tbsp Chia seeds
1 cup Dates
1 tsp Cinnamon
1/2 tsp Ground ginger
1/2 cup Desiccated coconut
Methods
Peel and chop up the carrot into chunks.
Place in a food processor and pulse until fine.
Add the remainder of the ingredients apart from the coconut and blend on a high speed until smooth and well combined.
Roll the dough into golf size balls, then roll in the desiccated coconut.
Place the balls on a tray or plate lined with baking paper.
Refrigerate until ready to eat.
