Ingredients

  • 3 med Carrots

  • 1 cup Rolled oats

  • 1 cup Walnuts

  • 1 Tbsp Chia seeds

  • 1 cup Dates

  • 1 tsp Cinnamon

  • 1/2 tsp Ground ginger

  • 1/2 cup Desiccated coconut

Methods

  • Peel and chop up the carrot into chunks.

  • Place in a food processor and pulse until fine.

  • Add the remainder of the ingredients apart from the coconut and blend on a high speed until smooth and well combined.

  • Roll the dough into golf size balls, then roll in the desiccated coconut.

  • Place the balls on a tray or plate lined with baking paper.

  • Refrigerate until ready to eat.
