Ingredients

  • 2 slices Mixed grain bread

  • 2 Eggs

  • 2 Tbsp High protein almond milk

  • 1/2 tsp Cinnamon

  • 1/4 Tbsp Butter

  • 1/2 Banana

  • 2 tsp Maple syrup

  • 1/8 cup Walnuts

  • 4 Tbsp High protein greek yoghurt (vanilla)

Methods

  • Beat the eggs, almond milk and cinnamon in a wide bowl or container.

  • Soak both sides of the bread in the egg mix until most of the liquid is absorbed.

  • Heat a pan with the butter over a medium heat.

  • Place the bread on the pan and cook for around 2-3 minutes each side or until golden. Any remaining egg mix can be poured over the bread.

  • Cut in half and serve with sliced bananas, maple syrup, chopped walnuts and protein yoghurt on the side or on top.
