Ingredients

  • 1 Plain bagel

  • 2 Eggs

  • 1/2 sml Avocado

  • 1 sprinkle Alfalfa sprouts & chilli flakes

  • 1 Tsp Unsalted butter

  • Salt & pepper

Methods

  • Cut the bagel in half and toast it in the toaster.

  • Heat the butter in a non-stick frying pan, and whisk the eggs in a bowl.

  • Once the butter has melted, add the eggs to the pan and fold continuously until the eggs are cooked but still soft. Remove from heat.

  • Spread both halves of the bagel with avocado, then top with egg and alfalfa sprouts. Season with salt, pepper & chilli flakes.
